James grew up on a farm in North Yorkshire and has always loved the countryside, wild food, and the natural world at large. His love of foraging started on nature walks with his parents where picking wild food to eat was just a way of life.

We will take you through the basic (and not so basic) tips and tricks on creating your own Pizza Dough, understanding the science behind the perfect dough, understanding how to make the perfect Passata and debating vigorously the endless combinations of fresh simple seasonal toppings that make this simple street bite one of the most loved regional Italian Foods across the world.

In this session, we’re diving into the art of filled pasta, a beloved tradition found in kitchens all across Italy. From north to south, nearly every region has its own version of pasta parcels—each one crafted to hold rich, flavourful fillings that celebrate local ingredients and heritage.
